Lucky Clover St. Patrick’s Event – Blogger Sign-Ups

 
I am excited to announce that I am going to be taking part in the Lucky Clover St Patrick's Event hosted by Andersons Angels and Joy on Momma Joyner!

The Little Hedgehog Cooks: Crustless Swiss Chard Quiche


Yummy, yummy! This week in my CSA box I got: 


Arugula
Beet Greens
Broccoli Rapinni
Cilantro (bunch)
Collard Greens (bunch)
Dandelion Greens (2 bunches)
Lemons
Oranges
Radishes
Salad Mix (bag)
Swiss Chard
Tangerines

I knew exactly how I was going to use the swiss chard! I love making Crustless Swiss Chard Quiche for breakfast! It's super yummy, healthy and little man gobbles it up! :)


 Crustless Swiss Chard Quiche
{recipe from HERE

Ingredients:
1 teaspoon olive oil
½ sweet onion
1 clove of garlic *I added this myself
½ bunch swiss chard
2 ½ cups shredded cheese
4 eggs
1 cup skim milk
salt
pepper

Directions:
Preheat oven to 375 degrees.
Wash and dry swiss chard. 
Cut off the very ends of the stems. Roughly chop the chard. (leaving stems intact)
Add onion and Chard to the oil and saute until stems are tender. (do not overcook) *I also added 1 clove of garlic at this point.*

Add salt & pepper to taste
Meanwhile, grate 2.5 cups of cheese. Use whatever varieties you want/have. Be creative! I used Cheddar Cheese, but other recommendations are: Swiss, Cheddar, Parmesan, and Cojito.
Wisk eggs. Add milk and cheese. Fold in the onion/chard mixture. 
Add salt & pepper to taste, if necessary.
Pour into a pie dish that has been sprayed with nonstick cooking spray.
Bake for 35-45 minutes or until golden brown and no liquid seeps when you poke it with a knife.

February photo-a-day challenge - Day 5 #FEBphotoaday

Mischief and Lavender

Yesterday morning hubby and little man brought me a cup of tea in bed. {Yay!} Hubby and I were sitting in bed, I was drinking tea and little man was keeping busy climbing in and out of our bed, flipping through a book and running around getting his sillies out. He wandered into our bathroom (which is connected to our master bedroom- there is no door to the bathroom, so you can see most of the bathroom from the bed) and since I knew thought there was nothing he could get into in the bathroom, I figured he was safe. 

Well, he was safe, but there was definitely mischief a-brewing! I realized, after a few minutes, that it was quiet ...too quiet. So, I quickly walked into the bathroom to see what little man was up to. He was having a blast! He had grabbed my aromatherapy bottle of lavender essential oil, that I had left sitting on the side of the tub from my bath, opened it (yes, he can open child safety lids!) and had vigorously shaken the entire contents of the bottle out while standing in the tub! Oh-my-goodness! The strong smell of lavender hit me like a ton of bricks (thank goodness it's such a relaxing/calming scent!) and I quickly started wiping up the droplets of lavender essential oil on the tub, in the tub and in the surrounding area. He got some great distance...let me tell you! Little man was covered in it and smelled like he had been tromping through a lavender field. He got a quick rinse and scrub in the shower and some fresh clothes. My bathroom on the other had, did not clean up quite so easily! Even though I had wiped down the lavender essential oil, there was still plenty that must have made it into the carpet (carpet in a bathroom? Weird, I know! What were the builders thinking!) and that did not come out so easily. Hours later as I was going upstairs, I got hit with it! It was if our entire upstairs was screaming, "LAVENDER!" It was a little intense. I opened up some windows to air the house out and by evening, the overwhelming smell of being inside of the lavender essential oil bottle was gone.

I wasn't even mad at little man. I think I actually just stood there and chuckled when I first saw him - standing in our tub, hands grasping a tiny bottle that he was shaking and flinging wildly...he was having a marvelous time! He probably thought that mommy left out a new toy! Haha! Lesson learned - never leave out anything that I don't want little man having the opportunity to open and dump...because he probably will. (Thank goodness it wasn't anything dangerous) Oh and I was reaffirmed in my believe that when there is too much silence, there is probably mischief afoot.

Time for a new bottle of lavender essential oil for me!

February photo-a-day challenge - Day 3 #FEBphotoaday

This made me think of one of the lines from a book that I read with little man:

Finished Friday: I Love You Because... Messasge Board

 I've seen this idea floating around Pinterest for quite awhile and for Christmas my future sister-in-law made a really neat one for my brother. I decided to finally create one for our home! I got my inspiration from Pinterest HERE and HERE. I created mine using Picnik and then I printed it out on some scrapbook paper I had. I popped it into a frame a wrote a little love not to hubby! Hubby loved it! I got an "Awww!" and a big hug and smoochies when he saw it! :) 


This was such an easy project to make ...I'm not sure what took me so long to make it! I love having a little Friday motivation to get me thinking about craft projects throughout the week and to help me actually make them!

This also turned out to be a great Valentine's decoration! It's perfect to use throughout the year, but it seems extra fitting for February. Another fun thing to do would be to print "I love you because..." on different scrapbook paper to go with the holidays!

I am taking part in Fat Mum Slim's February photo-a-day challenge! I love Instagram photos and all the fun variety and unique images you can create - I thought this would be a fun challenge to take part in!

My view at lunch: I looked down at my salad and lo and behold ...a ladybug! I guess the lettuce from my CSA box is definitely fresh from the farm to me! Maybe this is a sign of good luck. :) Either way, we rescued the ladybug and released her into our backyard.

{Almost} Wordless Wednesday: Bath-time Snuggles!

Hubby is home {yay!} and we are back to our nightly bath-time snuggling! Every night after a bath, hubby dries little man off and snuggles him before pj time!
